This is one of my all time favorite recipes to make, I have it at least once a week as it’s really the perfect lunch! Healthy and delicious
Sweet Potato & Vegetable Hash Topped w/ a Fried Egg
Ingredients:
1 cup sweet potatoes, diced
1 cup Brussels sprouts, trimmed
1 cup yellow squash, diced
1/4 onion, sliced
1 egg, fried or over easy (your preference)
1/2 cup spicy marinara sauce
olive oil, salt, pepper, turmeric, thyme
Directions:
Spread sweet potatoes out on a foil lined sheet pan, drizzle with olive oil, salt & pepper. Broil on high for 10 minutes, or until tender. Heat 1 tblsp of olive oil in a saute pan over medium high heat. Add Brussels sprouts, season with salt and pepper. Cook 2-3 minutes until lightly browned, then add the onion and squash. Season again with salt, pepper, and turmeric. Reduce the heat to medium, and cook for about 8 minutes or until veggies are tender, stirring occasionally. Remove from heat, and add sweet potatoes to the pan. Season again adding 1 tsp of thyme, and stir to combine. Plate the veggies, drizzle spicy marinara sauce over them, and then top with your egg. Voila! Lunch is served.
